
Once upon a time there was a legal secretary that dreamed of being a baker. About 2 years ago that dream came true for Cynthia Billingsley to Yreka’s great benefit! Cynthia and her husband Ralph opened Brickhouse Bakery & Pizzeria on Miner Street in a cool, restored historic building. Ralph does pizza, Cynthia does goodies and the combination resulted in a cool place for family and friends to gather in Yreka.
My favorite thing at Brickhouse is their salad - mmm that’s not totally accurate. Actually it’s the Brickhouse Vinaigrette! That may seem like a strange thing to highlight in this post, especially when their pizza is so good. But that dressing!!!! OMG! When I finish my salad (usually taken to go and eaten at my desk) there’s always a wonderful pool of dressing left in the bottom of the container. Then I have to endure this akward moment waiting until no one is looking so I can tip that container and drink that left over dressing! Is that wrong?! It’s sooooo good - I can’t help it…… ok, confession time over. My personal recommendation for a house pizza would have to be the Margherita - olive oil, tomatoes, basil, garlic, cheese! It’s perfectly delicate, simple, delicious. Finish it all off with one of those cute decorated sugar cookies and that pretty much makes a perfect weekend meal!
